Ingredients:
- 1 cup old fashioned oats
- ¼ cup milk of choice
- ½ cup pumpkin puree
- 1 tsp cinnamon
- ½ tsp pumpkin pie spice
- 1 Tbsp baking powder
- 1 Tbsp apple cider vinegar
- ¼ cup coconut oil, melted
- 1 egg
- ¼ cup honey
- ¼ cup chocolate chips *optional*
Note: batter will be thick.
Instructions:
- Combine all ingredients, except chocolate chips, into a blender and blend until smooth. Fold in chocolate chips. In a medium frying pan, melt enough coconut oil to cover the pan over medium heat.
- Use a large cookie scoop or ¼ measuring cup to ladle batter onto the pan. Use the back of the scoop or cup to flatten the pancake to desired thickness. Cook until golden brown on each side.
- Serve with maple syrup, or my favorite, peanut butter!
