Flourless Pumpkin Pancakes


  • 1 cup old fashioned oats
  • ¼ cup milk of choice
  • ½ cup pumpkin puree
  • 1 tsp cinnamon
  • ½ tsp pumpkin pie spice
  • 1 Tbsp baking powder
  • 1 Tbsp apple cider vinegar
  • ¼ cup coconut oil, melted
  • 1 egg
  • ¼ cup honey
  • ¼ cup chocolate chips *optional*

Note: batter will be thick.


  1. Combine all ingredients, except chocolate chips, into a blender and blend until smooth. Fold in chocolate chips. In a medium frying pan, melt enough coconut oil to cover the pan over medium heat.
  2. Use a large cookie scoop or ¼ measuring cup to ladle batter onto the pan. Use the back of the scoop or cup to flatten the pancake to desired thickness. Cook until golden brown on each side.
  3. Serve with maple syrup, or my favorite, peanut butter!
