Instant Pot Bean and Bacon Soup

Ingredients:

  • 2 C dried navy beans
  • 10 strips crispy fried bacon, chopped
  • Handful of pepperoni slices
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and diced
  • 3 medium celery stalks, diced
  • 2 jalapenos, seeded and diced
  • ½ teaspoon dried thyme
  • 1 ½ t sugar
  • 4 oz tomato paste
  • 1 dash red pepper flakes
  • 5 ½ C chicken broth
  • 1 tablespoon wine vinegar
  • 1 t liquid smoke
  • 1 bay leaf
  • 1 t salt
  • ½ t pepper

Instructions:

  1. Use the saute setting on your instant pot and cook your bacon until crispy. Remove the bacon, leaving 2 T bacon grease in the pot. Saute the onion until translucent, add the garlic and cook for another 2 minutes.
  2. Add the rest of the ingredients to the pot, including the bacon, and set manual cook to 45 minutes.
  3. Serve topped with chopped green onion!
