Chicken Fajitas

Ingredients:

SOUR CREAM SAUCE

  • 1 cup sour cream
  • 1 Tbsp mayo
  • 2 Tbsp lime juice
  • ¼ cup chopped cilantro
  • ½ tsp salt
  • ¼ tsp garlic powder

FAJITAS

  1. 3 chicken breasts, sliced in strips
  2. 3 bell peppers, sliced in strips
  3. 1 onion, sliced
  4. 2 Tbsp olive oil
  5. 2 Tbsp brown sugar
  6. 2 Tbsp lime juice
  7. 2 Tbsp soy sauce
  8. 1 Tbsp dijon mustard
  9. 1 Tbsp chili powder
  10. 2 tsp cumin
  11. 1 tsp garlic powder
  12. 1 tsp onion powder
  13. 1 tsp salt
  14. ½ tsp paprika
  15. ½ tsp oregano
  16. ¼ tsp pepper
  17. ¼ tsp cayenne
  18. 2 tsp liquid smoke
  19. 2 Tbsp cornstarch
  20. 2 Tbsp cold water
  21. Tortillas
  22. Shredded cheese

Instructions:

SOUR CREAM SAUCE

  1. Mix all the ingredients in a small bowl and refrigerate until use.

FAJITAS

  1. In a large skillet add ingredients #4-#18. Heat until bubbling and the mixture begins to thicken. Add the chicken, bell peppers, and onion. Saute’ until chicken is fully cooked and veggies are soft. *if you like your veggies crisper, wait a few minutes to add them to the chicken*
  2. Remove chicken and veggies from the skillet into another bowl. Mix together cornstarch and water and add to the leftover sauce in the pan. Heat and stir until thickened. Add the chicken and veggies back into the skillet and coat with the thickened sauce.
  3. Serve on warm tortillas with cheese and sour cream sauce!
