Corn Fritters


  • 2 eggs
  • 1 ⅓ cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon oil or melted shortening
  • 1 (16.5 oz.) can cream style corn
  • Oil for frying


  1. Beat eggs and add flour, salt, sugar, & baking powder and mix well. Stir in oil. Add can of corn and mix well.
  2. Drop by spoonful into hot oil (about 1 ½ inches deep). Allow to fry until golden brown, about 1 minute a side. Serve hot with honey butter. Makes 12 to 18 fritters.
