- 2 eggs
- 1 ⅓ cup flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 tablespoon oil or melted shortening
- 1 (16.5 oz.) can cream style corn
- Oil for frying
- Beat eggs and add flour, salt, sugar, & baking powder and mix well. Stir in oil. Add can of corn and mix well.
- Drop by spoonful into hot oil (about 1 ½ inches deep). Allow to fry until golden brown, about 1 minute a side. Serve hot with honey butter. Makes 12 to 18 fritters.
