Ingredients:
Sauce:
- 1 large onion, chopped
- 2 cloves garlic, crushed
- 4 Tbsp butter
- 2 tsp garam masala
- 2 tsp chili powder
- 2 tsp cumin
- ¼ tsp cayenne pepper
- ½ tsp salt
- ½ tsp pepper
- 1 Tbs fresh grated ginger
- 4 tsp lemon juice
- ½ cup sour cream
- 2 cup half & half
- 2 cans tomato puree
Chicken:
- 4 chicken breasts
- 2 sliced zucchini
- 2 tsp garam masala
- 1 tsp cumin
- ½ tsp cayenne pepper
- 1 tsp salt
- ½ tsp pepper
Instructions:
Sauce:
- In a large saucepan, saute onion in olive oil until translucent. Add the garlic and saute for another 2 minutes.
- Add the butter and spices, stir for about 30 seconds. Add grated ginger, lemon juice, sour cream, half & half, and tomato puree.
- Let simmer on low, stirring occasionally while you cook the chicken.
Chicken:
- In a large skillet, saute chicken, sliced zucchini, and spices in olive oil until chicken is fully cooked. Drain chicken + zucchini and add to sauce.
- Serve over rice with naan and enjoy!
