Chicken Burgers with a Kick

Ingredients:

Chicken Patties

  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 ½ lbs ground chicken (turkey works too)
  • 1 Tbsp sriracha
  • ¼ cup pickled jalapenos, chopped
  • 1 ½ tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp chili powder
  • ¼ tsp cayenne pepper
  • ¼ cup cilantro, chopped

Jalapeno Cilantro Mayo

  • 1 cup mayo
  • 2 tsp lime juice
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp pickled jalapenos, chopped
  • Handful cilantro, chopped

Toppings

  • Red onion
  • Lettuce
  • Tomato
  • Sharp cheddar cheese

Instructions:

Chicken Patties

  1. Saute onion in an olive oil coated skillet until onions are almost translucent. Add crushed garlic and saute for 2 more minutes. Scoop into a large bowl.
  2. In the bowl with sauteed veggies, combine the rest of the ingredients and mix well (I typically use my hands for this part). Meat mixture will be softer and more sticky than hamburger. Form patties a little larger than the buns you have, and cook in a skillet for about 7 minutes on each side (keep the temperature lower than medium as to not burn each side). Cook until inner temp reaches 165 Fahrenheit.

Jalapeno Cilantro Mayo

  1. Combine all ingredients into a blender and blend until smooth.
  2. Serve burgers on your bun of choice with jalapeno mayo, tomato, red onion, lettuce, and sharp cheddar cheese!
